HAPPY THANKSGIVING
If I may, I have enjoyed cooking for all the years since I have left my parent’s home.
Each year we have a Thanksgiving dinner at Wiggy’s that includes 30 plus people.
Kok buys the largest turkey he can buy and carves it. I always ask him the keep all the bones for me. I take them home and cook them for about two hours and then remove them from the pot, which is my I think 16-quart pressure cooker. I then stripe the meat from the bones.
I then put onions, potatoes, celery, poblano peppers, carrots, celery, string beans, spinach, and garlic this year and it has changed from year to year. I also added turmeric, curry, coriander and sea salt. I let this cook for also about two hours under a low to medium heat in the turkey broth that was created and then add the turkey. Believe it or not I think there was about two pounds of turkey.
When it cools down so I can handle it I will put it in quart jars and then put the jars in my pressure cooker and can them.
Last year I did not do this because I moved in late October but have done this for several years.
I expect to have at least 12 quarts. And will bring the rest to the factory so the people who work with me can enjoy it.
The Mexican population will enjoy it because the poblano peppers have given it a mild bite.
So now you have another way to use the left-over turkey so whenever you open a jar you can think you are celebrating Thanksgiving again.

PS For those who wondered Cookie also participated having her own bowl of turkey as well as someone feeling sorry for her and felt she had to give her a chunk of the bird.
